My days are full with reading, learning, creating, writing, working on a project which I love, recipe testing and of course, lot of cooking. With the Christmas just around the corner, LD’s school is gearing up for the festive season with school fayre, plays, choir, festive lunch and many activities which means close involvement with the parents. For now I have this quick recipe of Spicy Aloo-Guvar Subji which I have been cooking for the last couple of years, but never got to post it around. It is one of the most favourite ways to cook and serve cluster beans for my family. Although the guvar or cluster bean is not one of the favourite vegetables in my family, they always take second helping whenever I put this spicy potato and cluster beans curry on the dinner table.

Aloo-Guvar Subji is a simple and easy to make potato and cluster beans curry spiced with aromatic ground spice mix. It is one of those curries which is really easy to put together with simple everyday ingredients. It is one of those curries that show how everyday ingredients when mixed in right proportions can elevate the simplest of dishes. This recipe of Aloo-Guvar Subji always comes to my rescue when I am pressed for time. You can completely omit or replace the cluster beans with any other vegetable of your choice. I have paired the potatoes with okra, French beans, carrots or bell pepper for the same recipe with a delicious outcome.

Aloo-Guvar Subji (Spicy potato and cluster beans curry)

Cooking Time: 14-18 mins
Recipe Level: Easy/Beginner

Serves: 5-6 people
Shelf Life: Best served fresh but can be refrigerated for upto 3 days
Serving Suggestion: With rice or roti or as a stuffing/filling for wraps or in pita breads

Ingredients:
2 large Potatoes, quartered and sliced into 1 cm thick pieces
2 cups Cluster Beans, cut into 1¼ inch pieces
½ tbsp. Jaggery/Brown Sugar (Adjust as per taste)
Juice from ½ Lime/Lemon (Adjust as per taste)
Salt to taste

Spices Used:
½-1 tsp Red Chilli Powder (Adjust as per taste)
½ tsp Haldi/Turmeric Powder
1 heaped tbsp. Dhania/Coriander Powder
1 tsp Jeera/Cumin Powder

For Tadka/Tempering:
1 tsp Mustard Seeds
1 tsp Jeera/Cumin Seeds
1 tbsp Urad Dal/Split Black Lentils
1-2 Dry Red Chillies, halved
¼ tsp Hing/Asafoetida
A spring of Curry Leaves
1 tbsp Oil

Method:

  1. Take red chilli powder, cumin powder, coriander powder and turmeric powder in a small bowl and add 3-4 tbsp of water. Mix them well and keep it aside until needed.
  2. Heat oil in a pan and add mustard seeds, cumin seeds, urad dal, and dry red chillies. When the mustard seeds start to pop, add hing and curry leaves and give it a swirl for couple of seconds.
  3. Next add the sliced potatoes and increase the heat to high. Stir fry the potatoes for 2-3 minutes.
  4. Add the cluster beans, jaggery and salt to taste and reduce the heat to medium. Close the lid and cook undisturbed for 3-4 minutes.
  5. Remove the lid and the prepared spice mixture and mix them well to coat the vegetables. Close the lid and let it cook for 3-4 minutes on medium flame.
  6. Remove the lid and adjust the seasonings. Let the vegetables cook uncovered for another 4-5 minutes until the vegetables are cooked through and the water is evaporated. Turn off the flame and add freshly squeezed lime or lemon juice and mix well.
  7. Serve this delicious Cluster Beans and Potato Subji with rice or roties and enjoy!
