I fell in love air fryer zucchini when I was on a low-carb diet. One of the easiest recipes on the site and so tasty! We make that for dinner quite a bit!

Another favorite way to serve up zucchini is to fry it! Enter these Air Fryer Zucchini Chips – they have a crispy breading that tastes like they were deep-fried, making these the perfect appetizer. Especially when you serve them with ranch!

Let’s be real…ranch dressing makes everything better! I one time drive 3 hours for LUNCH to eat at a place that supposedly had the best ranch dressing. Spoiler, it didn’t, but I still had fun!

Anyway, if you love crispy fried zucchini, you’re going to love these! They make a great snack, but they’re also a tasty side dish! You really can’t go wrong.

Zucchini- This is the star of the show, so make sure you get this right. Pick one that is dark green and has a smooth texture. Yellow crookneck squash also works well here, if you like a variety.

Breading- Flour, egg, and panko make up the key components to the breading.

Seasonings- You’ll need garlic powder, smoked paprika, and cajun or creole seasoning.

How to Make Air Fryer Zucchini Chips:

Slice your zucchini– Slice into 1/4 inch thick rounds.

Prep the breading- Grab three shallow dishes that you can dip your chips into. The first dish needs flour and cajun seasoning.. For the second dish, you need to crack your egg and beat it until consistent as you would for scrambled eggs. For the final dish, add in your Panko bread crumbs along with the garlic powder and smoked paprika.

Bread the zucchini- Dip the zucchini in the flour, then the egg, then the panko dish. When you get to the panko dish press the chips into the breading a little bit to get it to stick. Do this on both sides!

Air fry the zucchini chips– Place your zucchini in a single even layer in the air fryer. You will likely need to cook in batches. Air fry for 10 minutes at 400 degrees F. Flip them over halfway through cooking to be sure they cook evenly.

How do I stop my zucchini chips from being soggy?

After you wash your zucchini pat them dry before slicing. Also, since all air fryers are a little different, you can try adding one or two minutes to the cooking time to get the crispness you desire. Last, you will notice we left salt out of the recipe. That is because it is best to add salt after the cooking is done, and to taste. So don’t salt until you are serving, don’t add it to the breading.

Do I need to refrigerate the leftovers?

These are best served fresh from the air fryer to retain that crispy texture. You can refrigerate these for 3-4 days, if necessary. Reheat in the air fryer for best results.

Recipe tips:

To keep your chips warm while you cook in batches, you can place them on a baking sheet in your oven. Keep your oven at 225 degrees F to assist in keeping them hot.

I love serving these with ranch dressing as noted. Sometimes, I replace my ranch with a Southwestern ranch for a little extra kick. It is lovely!

Our air fryer zucchini chips have a mild Cajun flavor to the breading! These chips are a super tasty alternative to homemade potato chips!

Equipment

Ingredients

  • 2 medium zucchini
  • 1 cup flour
  • 1 tablespoon Cajun seasoning
  • 1 large egg
  • 1 cup Panko bread crumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika

Instructions

  • Slice the zucchini into rounds.

  • Add the flour and Cajun seasoning to a shallow bowl and stir to combine.

  • Add the egg to a second bowl and whisk until smooth.

  • Add the panko, garlic powder, and paprika to a third shallow bowl and stir to combine.

  • Dip the zucchini slices first into the flour, then the egg, and then the panko, being careful to coat the zucchini evenly.

  • Arrange the zucchini in an even layer in an air fryer basket. You may have to work in batches, depending on the size of your air fryer.

  • Air fry at 400 degrees for 10 minutes, flipping the zucchini over halfway through. After 10 minutes, check for crispness and continue cooking for 1-2 minutes to reach your desired level of crispness.
