Ingredients and Substitutions

  • Olive Oil - Any neutral oil will work.
  • Garlic Cloves - Fresh garlic is best but you could substitute them for onions or shallots if you had to.
  • Sun Dried Tomatoes - I highly recommend using the sun dried tomatoes in olive oil because they are so much more flavorful. You could use another kind or even roasted tomatoes if you wanted.
  • Italian seasoning - If you don't have italian seasoning, you could use a little bit of rosemary, garlic powder, salty, thyme, and basil, and marjoram.
  • Red Pepper Flakes - These don't really add heat but they do add flavor. If you're scared, just leave them out but know that they add more depth than anything.
  • Flour - All purpose or self rising flour works just fine.
  • Pacific Vegetable Broth - You could also use chicken stock or turkey stock.
  • Fresh Cheese Tortellini - Feel free to swap out fresh cheese tortellini for any tortellini you prefer. I have not tried this with frozen ravioli so I'd let it thaw out if that's all you have.
  • Cream - Heavy cream works best but you could use half and half or even a vegan alternative if you'd like.
  • Fresh Spinach - You could swap fresh spinach for frozen spinch or even kale.
  • Parmigiano - Any hard, aged Italian cheese will work. Try Grana Padano or even Pecorino.

How to make it

Making this easy vegetarian marry me tortellini recipe is super easy and I can't wait to show you how I do oit!

To begin, just add olive oil, garlic, sun dried tomatoes (and their oil!), Italian seasoning and red pepper flakes to a heavy bottomed pot.

I'm using my Cuisinart Braiser which you can find in my shop.

Cook this mixture down for 3-4 minutes or until garlic is tender and fragrant.

Now it's time to make the roux. You'll want to add flour to the garlic tomato mixture and cook for 3 minutes to get the flour taste out.

Add in the Pacific Vegetable Broth and bring to a boil.

Let the mixture thicken for 3-5 minutes then add the uncooked tortellini and a pinch of salt and stir.

Turn the heat off and add in the heavy cream, parmigiano and spinach and stir once more until the spinach is wilted.

Season with salt and pepper to taste.
