A Homemade Lemon Poppy Seed Loaf for a Yummy Kids Snack

I am always on the hunt for great after school kids snack. If there is one thing I have learned over the last 10 years of being a mom, it is that a fed child is a happy child. So, with school days keeping us busy it was time to pull out a recipe that keeps the kids happy and their tummies full…lemon poppy seed loaf. This lemony loaf is a hit in our house. In fact, it’s actually hard to keep my husband and I from eating the entire loaf…before the kids get a chance. As my eldest daughter would say, “the secret ingredient is love.”

A Kids Snack Recipe – Lemony Poppy Seed Loaf

(adapted from Canadian Living)

Loaf Ingredients:

  • 1/2 cup room temperature butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1-1/2 cups all purpose flour
  • 3 tbsp poppy seeds
  • 2 tbsp lemon zest
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup milk

Syrup Ingredients:

  • 1/3 cup granulated sugar
  • 1 tbsp lemon zest
  • 1/3 cup lemon juice

Steps:

  1. Beat butter and sugar together, until fluffy…add eggs one at a time.

  2. In a small bowl, whisk flour, poppy seeds, baking powder, salt and lemon zest together.

  3. Add milk and dry ingredients into butter mixture alternately..one half at a time. Stir until all ingredients are combined.

  4. Pour into a 8” x 4” loaf pan.

  5. Bake in 325F oven for 1 hour, until tester comes out clean.

  6. To make the syrup combine sugar, zest and lemon juice in a small saucepan…heat over medium heat until sugar has dissolved.

  7. Pierce the warm loaf with a long skewer and pour the syrup over the loaf.

  8. Allow loaf to cool in the loaf pan and then turn out onto a cooling rack.

  9. Enjoy.

This loaf can be turned into muffins; simply pour into muffin pan, lined with muffin cups, and bake for 15-20 minutes. After the muffins are baked, pierce the muffins and pour 1 tsp of syrup on each muffin. This loaf makes a lovely afternoon kids snack or after school treat. I know my girls love it and I hope your kids will too.
